I have this weird obsession with ceviche.
Other people's endless quest for the 'ultimate' whatever-dishes revolve around all kinds of stuff (pizza, hotwings, pie, quiche, etc) but for me it's always been seafood. In all of my travels, I remember this dish in particular and still consider it to be one of the best tasting (and fresh) ceviche preparations I've had so far...the tequila certainly helped. Seafood all over Cozumel is, of course, amazing but this one surprised me the most because it came from a very unassuming and cozy cantina just off the coast.
I wish I had a better picture but this one will have to do. I'll keep searching!
